Simply Delicious Chicken and White Bean Soup

 

 

I put this soup together for the first time just a couple weeks after we got married four years ago and it has been a favorite since then.  It’s easy to stick in the crockpot in the morning to have ready for evening and equally easy to simmer on the stove for a short time right before whatever you want it for.  We recently discovered that Ascher really likes it too.

Simply Delicious Chicken and White Bean Soup

  • 2 – 15oz cans undrained white beans – I usually use Great Northern, but garbanzo beans were quite good this most recent time
  • 1 – 20oz can  undrained diced tomatoes
  • 2 boneless skinless chicken breasts, chopped bite size
  • 1 quart chicken broth – I used homemade bone broth
  • 1 teaspoon dry oregano
  • 2 cups frozen green peas
  • salt and pepper to taste

Put the first five ingredients into your pot or crockpot and bring to a simmer until the chicken is cooked through.  Add the peas and simmer again until the peas have reached your desired done-ness.  Taste and salt and pepper as desired.  Yum!  Totally easy!
